Food left out after being in the fridge: what to do

Keep chilled food cold and out of the fridge for the shortest time possible.

Time out of refrigeration matters

Food Standards Agency guidance sets a maximum of four hours for chilled food out during preparation. Food Standards Scotland says to put food back in the fridge as quickly as possible.

Putting it back does not reset the clock

Later refrigeration does not erase the time food spent warm. Use the checker to record the time out and the temperature context.

Leftovers and rice

Cooked leftovers and cooked rice have different handling guidance. The checker keeps rice separate instead of applying a generic chilled-food rule.
